I love anything with cheese! So these quesadillas include my love for cheese and the homemade tortillas found at my local grocery store bakery. I found this recipe years ago in a little booklet that I got in the mail. They are a “go-to” recipe when it’s been a long day at work, and I need something easy. They are pretty good for you too!
1/4 cup chopped onion
1 (10 oz) pkg. frozen spinach, thawed
1 (15 oz) can black beans, rinsed and drained
2 tsp lemon juice
1 Tbs olive oil
1 tsp garlic powder
1 tsp ground cumin
1 tsp chili powder
1 tsp salt
8 flour tortillas
shredded Mexican-blend cheese
Sour Cream (optional)
1. Saute the onion, black beans, spinach, and lemon juice in hot oil in large skillet. Add garlic powder, cumin, chili powder and salt, stir well. Cook 5-7 minutes until heated through. Remove from heat.
2. Place 1 tortilla in slightly greased skillet. Sprinkle cheese and enough of spinach mixture to cover tortilla and top with more cheese. Add 2nd tortilla to layers. Use the back of a spatula and press quesadilla to melt cheese together and “grill” tortilla. Flip the quesadilla over after a few minutes to “grill” other side.
3. Repeat with remaining tortillas. I usually get 4 quesadillas, using 2 tortillas each. Serve with salsa or sour cream if desired.
